Cooking with  Foil Pack on the Grill?

Summer is here and it is grill season!

.How about a hands off way to  cook with minimal  cleanup.   The answer is foil packets. All you need is  some heavy duty aluminum foil and you can make almost anything. 

 

The technique: (see pictures below)

1.  Place  two large pieces of  heavy duty foil  perpendicular to each other.

2.  Place your food in the center of  the foil.

3. Pull the foil up over  the food and  seal the foil creating a tent at the top so air can circulate.

Here are some recipes to try but the possibilities are endless…

Gnocchi with vegetables

1 lb. gnocchi, ( I used the Toscanini bread)

1 package cherry tomatoes

1 large  eggplant, diced

2  zucchini,  diced

1 red onion, diced

4 cloves garlic,  minced

3/4  cup Ken’s  Zesty Italian  dressing

Salt/pepper

  1. Toss everything together
  2. Place on heavy duty foil
  3. Make a tent
  4. Place on grill over medium heat for 40 minutes

 

Mexican Chicken

1 package boneless chicken thighs

4 ears of  corn on the cob

1 package cherry tomatoes

¼ cup  fresh cilantro, chopped 

2  tbsps. Olive oil

4 tbsps. Mexican seasoning

 

  1. Mix olive oil with Mexican seasoning to form a paste
  2. Brush over the chicken.
  3. Place cobs of corn on a piece of heavy-duty foil
  4. Place chicken on top  of the  corn
  5. Top with tomatoes and  chopped  cilantro
  6. Place on grill for 30 minutes

 

Salmon  with  farm  fresh  zucchini   squash

4  fillets of salmon

2  yellow  squash,  sliced

Olive oil spray

mayonnaise, 1/2 cup

mustard , 2  tablespoon

dried  dill,   1/2 tsp

Salt and pepper

 

  1. Place salmon on  heavy duty  foil
  2.  Mix mayonnaise, mustard and dill, spread evenly over the salmon
  3. Spray salmon with olive oil spray

4. Scatter squash over the salmon, spray again  and season with salt and pepper.

  1. Place on grill  in  tented  foil and bake over medium heat for 30  minutes

Asian tofu

1 package tofu,  drained and cut in squares

1 bottle SanJ peanut sauce  or Haven’s  Kitchen coconut cashew sauce

4  bunches baby bok choy

Olive oil spray

Salt  and pepper

 

  1. Drain tofu, cut into cubes.
  2. Marinate tofu in a dish with your choice of marinade
  3. Place bok choy on heavy duty foil, spray with olive oil and season  with salt and pepper
  4. Place marinated tofu in the center
  5. Tent foil and cook on the g rill for 30 minutes over  low heat.
