Back to school … already?

Summer is coming to  an end  and  kids are starting to go back to school!

How about a few kid friendly lunch recipes.   All you need is some creativity you can make some fun meals. 

 

Three  no recipe ideas :

1.  Bento box: fill one section with  chicken nuggets, add a  dip and round  out with fruit and veggies.

2.  Meat roll ups: take your kids favorite deli meat, spread with  their favorite sauce and roll around a crunchy vegetable.

3. Cheese  roll ups: Take your kid favorite cheese, spread  some sauce and wrap around a pickle.

Here are some recipes to try that will absolutely please the kids…

Pesto pasta  with cheese

1 lb. Banza pasta

2 bunches of basil

1  cup parmesan  cheese

4 cloves garlic

1/4 cup olive oil

1 package mozzarells cheese cut in chunks

Salt/pepper

  1. Cook pasta as per package directions.
  2. Place basil, cheese, garlic, and olive oil in a food processor and process until smooth.
  3. Cut mozzarella cheese in chunks.
  4. Combine pesto sauce, pasta and mozzarella chunks in a bowl, season with salt and pepper.

 

Vegetable rice wraps

1 package rice wraps

1 cucumber sliced thin

1 carrot sliced thin

1 avocoado sliced thin

couple  basil leaves

Sauce

1 tbsp. oil

1 clove garlic, minced

1  1 /2 tbsp. babrbecue sauce

 1 tsp sesame oil

1 tsp rice vinegar

1 scallion, sliced thin

1/2  tsp tamari

3 tbsps water

1  tbsp peanut butter, almond butter or  sunbutter

 

  1. Mix all ingredients  for the sauce  and set aside.
  2. Soak rice wraps in water to soften.
  3. Once  softened place each on a  sheet of  parchment paper. 
  4. Spread sauce in middle of  wrap,  place a basil leaf, then a line of vegetables.
  5. Fold the  bottom up over the vegetables, then the  sides, and lastly the top.
  6. Serve with extra sauce for dipping or with stwmed shelled edamame.
