When I have overripe bananas , I think let's bake.
Overipe bananas are very sweet because as they ripen the starch turns to sugar.
They are sweet enough to bake with and not need to use added sugar.
I originally developed this recipe for the Jewish French Magazine Holiday issue.
My teenagers loved them so much we know make them all the time.
This a super easy, healkthy and delicious recipe, it will be a favorite unless of course you do not like bananas.
Makes 20 biscotti | Prep time 10 minutes | Cook time 1 ½ hours
DELICIOUS DATE BANANA CHOCOLATE CHIP BISCOTTI
18 large medjool dates or 24 regular dates
1 large overipe banana
1 ½ cups almond flour
1 tablespoon vanilla
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon baking soda
1 cup chocolate chips
Substitution tip: You can switch out chocolate chips and use dried fruit or nuts instead to make different varieties.
